Available knives
Each knife is hand-forged in my workshop using a hammer and anvil, a hand press and sometimes a drop hammer.
To ensure the best quality tempering, I use an electric tempering oven.
The wood for the handles is either locally sourced or reclaimed.
The knives are sharpened using Japanese water stones.

Nakiri - 140 mm
Use
The ‘Nakiri’ is a knife of Japanese origin that is the vegetable-cutting knife par excellence. Lightweight and with a very thin blade, it is a real vegetable-cutting machine. It has a traditional Japanese octagonal handle.

Blade: Sandwich of non-tempered stainless steel, pure nickel and 135Crv3 carbon steel in the centre.
